If you are using your oven’s convection setting and the brownies are not getting hot enough, then increase the temperature by 10 degrees C for every 10 minutes of cooking time. Brownies usually need about 15-20 minutes of cooling time after they have been removed from the oven. This gives them sufficient time to set before they become too warm and soft (or “melty”).
How to tell if brownies are done?
